  1. Comenzamos dejando en remojo las lentejas de un día para otro. Abrir y lavar bien el puerro porque trae mucha tierra. Cortar las papas, la panceta, el cantimpalo y el zapallo en cubos. Cebolla, morrón y el puerro picarlos bien chicos. (Si desean pueden agregar batata y también carne, si cortan la papa y el zapallo más grandes dsrle una precoccion antes de inir con las lentejas.) así las lentejas no se pasan hasta que este cocida la papa y demás.
  2. Por otro lado sudar la panceta y el cantimpalo para desgrasarlos un poco (no agregar aceite la panceta ya es grasosa) una vez que estén cocidas reservar. Agregar los vegetales y desglasar con la grasa que dejo la panceta y el cantimpalo. Sudar todo bien, salpimentar.
  3. En una olla pasar los vegetales, incorporar las lentejas y sudar todo junto por un minuto. Agregarle agua hasta que cubra. Incorporar la papa, el zapallo y por último la panceta y el cantimpalo. Rectificar sal y pimienta si es necesario. Dejar cocinar hasta que todo este al dente (papa, zapallo y lentejas) si ven que en la foto de las lentejas hay brotes que es quedaron guardadas en la heladera y la humedad hizo que germinaran un poco. Pero no teman que ni es nada malo se pueden consumir.
  4. Un tip que para mi le va muy bien es agregarle un poco de puré de tomate o tomate natural rallado. Pero si no con el agua de cocción de las lentejas y los vegetales ya queda sabroso.
